A comforting and creamy potato leek soup perfect for a cozy meal. Simple to prepare with fresh ingredients and rich flavors.
Ingredients

(or more for thinner texture)

Yukon Gold potatoes
(peeled and diced into ½-inch pieces)

bay leaf

Instructions
Slice and clean the leeks. Remove stems and green leaves, then chop and rinse.
Heat olive oil in a large pot. Sauté leeks for 8-10 minutes until softened, then add garlic and cook for 1 minute.
Add potatoes, salt, bay leaf, thyme, and broth. Bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
Remove bay leaf and thyme sprigs. Blend the soup until smooth using an immersion blender or in batches in a blender.
Serve hot, garnished with chopped chives and black pepper.
Notes
For a thinner soup, add more broth during cooking.
