A comforting and creamy potato leek soup perfect for a cozy meal. Simple to prepare with fresh ingredients and rich flavors.

Ingredients

Vegetables

  • 2 tablespoons extra-virgin olive oil
  • 3 large leeks (white and light green parts)
  • 2 cloves garlic (minced)
  • 4 cups vegetable broth (or more for thinner texture)
  • 2 pounds Yukon Gold potatoes (peeled and diced into ½-inch pieces)
  • 1 teaspoon kosher salt
  • 1 bay leaf bay leaf
  • 2 sprigs fresh thyme
  • for garnish chopped chives and black pepper (for garnish)

Instructions 

  • Slice and clean the leeks. Remove stems and green leaves, then chop and rinse.
  • Heat olive oil in a large pot. Sauté leeks for 8-10 minutes until softened, then add garlic and cook for 1 minute.
  • Add potatoes, salt, bay leaf, thyme, and broth. Bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
  • Remove bay leaf and thyme sprigs. Blend the soup until smooth using an immersion blender or in batches in a blender.
  • Serve hot, garnished with chopped chives and black pepper.

Notes

For a thinner soup, add more broth during cooking.
