Ingredients

Vegetables

  • 1 large cucumber (diced)
  • 1 pint grape tomatoes (halved)
  • 1 medium green bell pepper (diced)
  • ½ medium red onion (thinly sliced)
  • ½ cup kalamata olives (halved)
  • 4 ounces feta cheese (crumbled)
  • cup red apple vinegar
  • 1 medium lemon (juice)
  • 1 teaspoon dijon mustard
  • 2 cloves garlic (minced)
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup olive oil
  • to taste salt and pepper

Instructions 

  • Combine all vegetables and feta in a large bowl.
  • Whisk vinegar, lemon juice, mustard, garlic, oregano, salt, and pepper in a small bowl. Gradually add olive oil.
  • Drizzle dressing over salad and stir gently to combine.
