A refreshing and flavorful shrimp salad with crisp cucumbers and fresh dill, perfect for a light lunch or dinner.

Ingredients

Dressing

  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon lime zest
  • 3 tablespoons lime juice
  • 3 tablespoons fresh dill, minced
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika

Main

  • 2 lb large shrimp, peeled and deveined
  • 1 large English cucumber, halved and sliced
  • 4 scallions scallions, thinly sliced
  • 1/2 cup celery, finely diced

Instructions 

  • Mix mayonnaise, sour cream, lime zest, lime juice, dill, Dijon mustard, garlic, salt, pepper, and smoked paprika to make the dressing.
  • Cook shrimp until pink and opaque, about 3-4 minutes, then let cool.
  • Combine cooked shrimp, cucumber, scallions, and celery in a large bowl.
  • Toss the shrimp mixture with the dressing until evenly coated.
  • Serve chilled, garnished with additional dill if desired.

Notes

For extra flavor, chill the salad for at least 30 minutes before serving.
