Beef Barley Vegetable Soup

A hearty and nutritious soup combining tender beef, barley, and fresh vegetables, perfect for a comforting meal.

Ingredients

Meat

  • 1.5 pounds chuck roast (Note 1)
  • 1 tablespoon olive oil

Vegetables

  • 4 large carrots (Note 2)
  • 4 celery ribs celery
  • 1 large onion
  • 1 clove garlic, minced

Broths and Water

  • 4 cups chicken broth (Note 3)
  • 3 cups beef broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 0.5 cup barley (Note 4)
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons Au Jus or Demi Glace gravy mix (or brown gravy mix, Note 5)
  • to taste kosher salt and black pepper
  • 4 cups fresh baby spinach (optional)

Instructions 

  • Peel carrots and chop into large chunks; dice celery and onion. Pulse in food processor or chop manually.
  • Heat oil in a large pot, brown seasoned beef for about 4 minutes, then remove and cut into bite-sized pieces. Sauté vegetables for 5-7 minutes, add garlic and cook 1 minute.
  • Add broths, water, thyme, barley, Worcestershire, gravy mix, and beef. Bring to a boil, then simmer for 1 hour, adding more time if needed.
  • Stir in spinach until wilted, about 1 minute. Adjust seasonings and serve hot with bread.

Notes

For a richer flavor, let the soup simmer longer or add more gravy base as desired.
