Instructions
Peel carrots and chop into large chunks; dice celery and onion. Pulse in food processor or chop manually.
Heat oil in a large pot, brown seasoned beef for about 4 minutes, then remove and cut into bite-sized pieces. Sauté vegetables for 5-7 minutes, add garlic and cook 1 minute.
Add broths, water, thyme, barley, Worcestershire, gravy mix, and beef. Bring to a boil, then simmer for 1 hour, adding more time if needed.
Stir in spinach until wilted, about 1 minute. Adjust seasonings and serve hot with bread.
Notes
For a richer flavor, let the soup simmer longer or add more gravy base as desired.
