Sauce ingredients
1/3cupbalsamic vinegar
2Tbsp.honey
2Tbsp.oil, such as avocado or olive oil
2garlic clovesminced garlic
1tsp.Italian seasoning
1Tbsp.Dijon mustard
8oz.grape tomatoes, halved
8oz.fresh mozzarella balls (ciliegine or pearls)
2Tbsp.finely chopped fresh basil
2lb.boneless, skinless chicken breasts, pounded to even thickness
2Tbsp.avocado oil or other high-heat oil
Kosher salt and fresh black pepper
Instructions
Whisk sauce ingredients, season with salt and pepper, and set aside.
Toss tomatoes, mozzarella, and basil; season and set aside.
Preheat oven to 400°F (200°C). Heat oil in a skillet, season chicken, and brown 1-2 minutes per side. Add balsamic sauce and simmer.
Remove from heat, top chicken with tomato-mozzarella mixture, and bake for 18-23 minutes until cooked through. Rest 5 minutes before serving.
