A flavorful baked dish combining tender chicken breasts with seasoned rice and fresh salsa, topped with cheese and herbs.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 4 chicken breasts chicken breasts (about 3 ounces each)
  • 1 tablespoon taco seasoning
  • 2 bell peppers bell peppers (chopped, red and green)
  • 1.25 cups long grain white rice
  • 3 cups chicken stock
  • 1 cup fat free salsa (for the rice)
  • 1.5 cups fat free salsa (for the chicken)
  • 0.5 cup shredded cheddar cheese

Optional toppings

  • chopped cilantro and sliced jalapeños cilantro and jalapeños (for serving)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sear seasoned chicken breasts in a skillet for 2 minutes per side, then set aside.
  • Mix chicken stock and 1 cup salsa; add rice, bell peppers, and pour over mixture in the skillet.
  • Nestle chicken back into the rice mixture, top with remaining salsa, cover, and bake for 40 minutes.
  • Remove lid, sprinkle cheese, and bake uncovered for 10-15 minutes until chicken reaches 165°F (74°C).
  • Garnish with cilantro and jalapeños, serve hot.

Notes

Use an instant-read thermometer to ensure chicken is fully cooked.
