Instructions
Preheat oven to 375°F (190°C).
Sear seasoned chicken breasts in a skillet for 2 minutes per side, then set aside.
Mix chicken stock and 1 cup salsa; add rice, bell peppers, and pour over mixture in the skillet.
Nestle chicken back into the rice mixture, top with remaining salsa, cover, and bake for 40 minutes.
Remove lid, sprinkle cheese, and bake uncovered for 10-15 minutes until chicken reaches 165°F (74°C).
Garnish with cilantro and jalapeños, serve hot.
Notes
Use an instant-read thermometer to ensure chicken is fully cooked.
