Enjoy these wholesome pumpkin oatmeal muffins that are perfect for a nutritious breakfast or snack, packed with warm spices and optional add-ins.
Ingredients
Dairy or nondairy milk

old-fashioned whole rolled oats

(chocolate chips, chopped pecans or walnuts, dried cranberries)

coarse sugar
coarse sugar for topping
Instructions
Preheat oven to 350°F (177°C). Spray a muffin pan with nonstick spray.
Mix all ingredients except add-ins and topping. Fold in optional add-ins.
Spoon batter into muffin cups, top with coarse sugar if desired. Bake for 28–30 minutes.
Cool for 5-10 minutes before serving. Store leftovers refrigerated up to 1 week.
Notes
For extra crunch, sprinkle coarse sugar on top before baking.
