Ingredients

Protein

  • 1.5 lb Cod (sustainably sourced)

Dry Ingredients

  • 1/2 cup All-Purpose Flour (or gluten-free blend)
  • 3/4 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Ground Coriander (freshly ground)
  • 3/4 tsp Paprika
  • 3/4 tsp Ground Cumin
  • 1/4 tsp Red Pepper Flakes (adjust according to preference)

Liquids

  • 6 tbsp Lemon Juice (freshly squeezed)
  • 5 tbsp Extra Virgin Olive Oil (good quality)
  • 2 tbsp Butter (unsalted, melted)
  • 6 cloves Garlic (finely minced)
  • 1/4 cup Fresh Parsley (finely chopped)

Instructions 

  • Preheat oven to 400°F (200°C). Season the cod with salt, pepper, coriander, paprika, cumin, and red pepper flakes.
  • Mix lemon juice, olive oil, and melted butter; brush over the seasoned cod.
  • Place the cod on a baking sheet lined with parchment paper and bake for 15-20 minutes until flaky.
  • In the last 5 minutes, sprinkle minced garlic and chopped parsley over the fish.
  • Serve hot with your favorite sides and enjoy!

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
