Ingredients
Fennel
1bulbfennel bulb(thinly sliced)
Avocado
1pieceavocado(peeled and cut into chunks)
Grapefruit
2piecespink grapefruits(peeled and segmented)
Greens
2handfulslightweight greens(such as pea shoots, baby spinach, or watercress)
Parmesan
ShavedParmegiano-Reggiano cheese(shaved)
Citrus Dressing
1/4cupfresh squeezed grapefruit juice
1/4cupextra virgin olive oil
2tablespoonswhite balsamic vinegar
1tablespoonminced shallot
1teaspoongrainy brown mustard
1/2teaspoonkosher salt
Freshly groundblack pepper
Instructions
Combine fennel, avocado, grapefruit, and greens in a large bowl. Drizzle with 3-4 tablespoons of citrus dressing, season with salt and pepper, then toss gently. Top with shaved Parmesan.
For the dressing, add all ingredients to a jar, seal, and shake well.
