A fresh and vibrant salad combining crisp cucumbers and creamy avocado, perfect for a light, healthy meal or side dish.

Ingredients

Vegetables

  • 2 pieces English cucumbers (sliced)
  • 1 large avocado (pitted, peeled and sliced)
  • 0.33 cup green onion (chopped)
  • 2 Tbsp lime juice (from 1 medium lime)
  • 2 Tbsp extra virgin olive oil
  • 1 tsp sea salt (or to taste)
  • 1/8 tsp black pepper

Instructions 

  • Wash and thinly slice the cucumbers.
  • Cut the avocado in half, remove the pit, peel, and slice.
  • Chop the green onions and add all ingredients to a bowl.
  • Drizzle lime juice and olive oil over the mixture.
  • Sprinkle with salt and pepper, then toss gently.
  • Serve immediately while fresh and chilled.

Notes

Use ripe avocados for best flavor.
