  • 400 g chickpeas, drained and rinsed
  • 2 medium avocados, diced
  • 250 g cherry tomatoes, halved
  • 1/4 medium red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin powder

Instructions 

  • Combine chickpeas, cherry tomatoes, red onion, and cilantro in a large bowl.
  • Whisk lime juice, olive oil, cumin, salt, and pepper in a small bowl.
  • Pour dressing over the salad and toss gently.
  • Gently fold in diced avocados.
  • Serve immediately or chill for later.

Notes

For extra flavor, add a pinch of chili flakes or a dash of hot sauce.
