A vibrant and crunchy salad combining shredded cabbages, fresh herbs, and a tangy Asian dressing, perfect as a side or light meal.

Instructions
Combine rice vinegar, soy sauce, lime juice, peanut oil, sugar, and garlic in a jar. Shake well.
Mix shredded cabbages, carrots, bean sprouts, green onions, coriander, and mint in a large bowl.
Pour dressing over the salad and toss gently to coat.
Garnish with fried shallots if desired and serve immediately.
Notes
For extra flavor, add toasted sesame seeds or chopped peanuts.
