A vibrant and crunchy salad combining shredded cabbages, fresh herbs, and a tangy Asian dressing, perfect as a side or light meal.

Ingredients

Vegetables

  • 3 cups green cabbage, shredded
  • 3 cups red cabbage, shredded
  • 2 large carrots, julienned
  • 3 cups bean sprouts
  • 3 green green onions, sliced
  • 1/2 cup coriander leaves
  • 1/2 cup mint leaves
  • 3 tbsp rice vinegar
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 3 tbsp peanut oil
  • 1 1/2 tbsp sugar
  • 2 cloves garlic, minced
  • 3 cups shredded cooked chicken (optional)

Instructions 

  • Combine rice vinegar, soy sauce, lime juice, peanut oil, sugar, and garlic in a jar. Shake well.
  • Mix shredded cabbages, carrots, bean sprouts, green onions, coriander, and mint in a large bowl.
  • Pour dressing over the salad and toss gently to coat.
  • Garnish with fried shallots if desired and serve immediately.

Notes

For extra flavor, add toasted sesame seeds or chopped peanuts.
