A refreshing and tangy cucumber salad with sesame and ginger, perfect as a side dish or light meal.

Ingredients

Vegetables

  • 2 large English cucumbers (thinly sliced)
  • 2 spring onions spring onions (thinly sliced)
  • 1 small carrot (julienned (optional))

Dressing

  • 2 tablespoons soy sauce (use tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon sugar or maple syrup
  • 1 clove garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon chili flakes or red chili (optional, finely sliced)
  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon fresh cilantro (chopped (optional))

Instructions 

  • Sprinkle sliced cucumbers with salt, sit for 5-10 minutes, then pat dry.
  • Combine cucumbers, spring onions, and carrot in a bowl.
  • Whisk together soy sauce, rice vinegar, sesame oil, sugar, garlic, ginger, and chili.
  • Pour dressing over vegetables and toss to coat evenly.
  • Sprinkle with sesame seeds and cilantro, then serve immediately or refrigerate for 10-15 minutes.

Notes

This salad is best enjoyed fresh but can be chilled for a more marinated flavor.
