A fresh and crunchy salad combining crisp cucumbers and carrots with a tangy sesame dressing, perfect for a light side dish.
Ingredients

English or hothouse cucumbers, chilled

large carrots

rice vinegar

((about half a lime))

fresh cilantro, chopped (optional)
Instructions
Use a spiralizer or thinly slice cucumbers and carrots.
Salt the cucumber noodles and drain for 15-20 minutes.
Whisk together vinegar, lime juice, honey, sesame oil, red pepper flakes, and sesame seeds.
Pat cucumber dry, then toss with dressing and garnish with scallions, cilantro, and sesame seeds.
Serve immediately; store leftovers in fridge for up to a day.
Notes
This salad is best enjoyed fresh but can be stored for a short time in the fridge.
