Dressing

  • 3 tablespoons avocado oil or olive oil
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons lite soy sauce or tamari
  • 1 tablespoon honey
  • 2 teaspoons sesame oil
  • 1 clove garlic (minced)
  • 1 teaspoon fresh ginger (heaping, freshly grated)
  • crushed red pepper flakes (to taste)

Salad

  • 2 cups shredded chicken
  • 1.5 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup chopped cucumber
  • 1 cup edamame
  • 1 avocado (diced)
  • 3 green onions (sliced)
  • 0.25 cup chopped cilantro
  • 0.25 cup chopped mint
  • 2 tablespoons sesame seeds
  • 0.33 cup chopped peanuts or cashews
  • kosher salt and black pepper (to taste)
  • chili crunch (for serving, optional)

Instructions 

  • Whisk together the dressing ingredients in a small bowl.
  • Combine the salad ingredients in a large bowl.
  • Pour the dressing over the salad and toss to combine.
  • Top with peanuts or cashews and season with salt and pepper.
  • Serve with chili crunch if desired.

Notes

For added crunch, consider using toasted nuts.
