cashews, chopped (i use roasted & salted)

fresh lime juice (about 2 limes)

Instructions
Finely shred the veggies and chop the herbs and cashews. Combine in a large mixing bowl.
Mix all dressing ingredients in a small bowl until emulsified.
Pour the dressing over the salad and toss well.
Notes
For added protein, include shredded chicken.
