Ingredients

Protein

  • 1 lb boneless skinless chicken thighs
  • 1 tablespoon oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 cup shredded carrots
  • 3 tablespoons hoisin sauce
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar optional
  • 1 head butter lettuce leaves separated and rinsed
  • 2 green onions sliced
  • 1 tablespoon sesame seeds
  • Pinch optional red pepper flakes

Instructions 

  • Heat oil in a skillet, cook diced chicken until browned, about 6-7 minutes.
  • Add garlic and ginger, cook for 30 seconds, then stir in carrots and cook 1-2 minutes.
  • Stir in hoisin, soy sauce, sesame oil, and rice vinegar; cook until thickened, 1-2 minutes.
  • Spoon mixture into lettuce leaves, top with green onions, sesame seeds, and red pepper flakes.
  • Serve immediately while warm with chilled lettuce.

Notes

For extra flavor, add a splash of lime juice before serving.
