A vibrant and crunchy salad combining marinated chicken with fresh vegetables and a creamy peanut dressing, perfect for a light yet satisfying meal.

Ingredients

Protein

  • 1 pound chicken breast
  • 1/4 cup low sodium soy sauce or tamari

Vegetables

  • 3 cups shredded purple cabbage
  • 3 cups shredded green cabbage
  • 1 cup shredded carrot
  • 1 red bell pepper sliced into strips
  • 1/2 cup shelled edamame

Dressing

  • 3 tablespoons natural creamy peanut butter
  • 2 tablespoons honey

Instructions 

  • Cut chicken into small cubes and marinate in soy sauce for at least 30 minutes.
  • Whisk together peanut butter, honey, soy sauce, and water to make dressing.
  • Shred cabbages and carrots; combine in a large bowl.
  • Cook marinated chicken in a skillet until browned and cooked through.
  • Let everything cool slightly; toss salad with dressing and top with cooked chicken.

Notes

For extra crunch, add chopped peanuts or sesame seeds.
