This refreshing Apple Spinach Salad combines the crispness of apples with the earthiness of spinach, topped with a tangy dressing.

Ingredients

Dressing

  • 80 ml extra virgin olive oil
  • 45 g dijon mustard
  • 45 ml maple syrup
  • 1 large lime (juice freshly squeezed)

Salad

  • 170 g baby spinach
  • 120 g pecan halves (toasted, some chopped finely)
  • 75 g dried cranberries
  • 1 small green apple (granny smith), cored and diced
  • 1 small red apple (such as fuji or gala), cored and diced
  • 40 g goat cheese (crumbled)

Instructions 

  • Combine all salad dressing ingredients in a mason jar and whisk until emulsified.
  • Arrange the salad in individual bowls for presentation.
  • Add spinach to each bowl and nestle the remaining ingredients on top.
  • Drizzle with the salad dressing.
  • Alternatively, combine all salad ingredients in a large bowl, add dressing, and toss.

Notes

For added flavor, consider using roasted nuts or adding a sprinkle of salt.
