A rustic and flavorful galette combining sweet apples, toasted hazelnuts, fragrant rosemary, and rich brown butter pastry for a delightful treat.

Ingredients

Dough

  • 100 g unsalted butter, plus extra to grease
  • 0.25 tsp fine salt
  • 160 g plain flour
  • 2 medium free-range eggs
  • 3 tbsp ground hazelnuts
  • 1 tbsp light muscovado sugar
  • 0.25 tsp ground cinnamon
  • 2 cooking apples apples
  • 0.25 lemon juice
  • 1 small rosemary sprig, leaves picked and finely chopped
  • 2 tbsp maple syrup

Instructions 

  • Cook the butter over medium heat until browned and nutty, then cool and chill until solid.
  • Blend the browned butter with flour and one egg to form a dough, then chill for 1 hour.
  • Preheat oven to 180°C, mix hazelnuts, sugar, cinnamon, and prepare apple slices with lemon and rosemary.
  • Roll out dough, add hazelnut mixture and apple slices, fold edges to form a rustic galette, brush with remaining egg.
  • Bake for 20-25 minutes, then brush with maple syrup and serve warm or cold.

Notes

Ensure the butter is browned properly for a nutty flavor.
