A refreshing and nutritious salad combining the sweetness of apples, the tartness of cranberries, and the crunch of cashews, all drizzled with a tangy balsamic vinaigrette.

Ingredients

Salad Ingredients

  • 170 g baby spinach
  • 1 each granny smith apple (sliced)
  • 1 each gala apple (sliced)
  • 150 g cashew nuts
  • 75 g dried cranberries
  • 60 g mayo
  • 80 ml balsamic vinegar
  • 30 g dijon mustard
  • 15 ml freshly squeezed lemon juice
  • 30 g honey (or more, to taste)

Instructions 

  • Combine all salad ingredients in a large bowl, except for the dressing.
  • In a mason jar, mix all dressing ingredients and whisk until emulsified. Adjust mayo and honey to taste.
  • Drizzle dressing over salad and toss. Serve immediately.

Notes

Feel free to adjust the sweetness of the dressing by adding more honey.
