Instructions
Feed your sourdough starter 6-12 hours before baking.
Melt butter, cook apples with lemon juice until softened, then add sugar, cinnamon, and nutmeg. Cool completely.
Mix flour, water, starter, and salt; rest for 30 minutes. Fold in apple mixture in four stages, resting 30 minutes between each.
Shape dough into a boule, refrigerate overnight. The next day, score and bake in a preheated Dutch oven at 450℉ with steam for 40-55 minutes.
