A classic and creamy macaroni salad with colorful bell peppers, perfect for picnics and gatherings.

Ingredients

Dressing

  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 0.33 cup sweet relish
  • 3 tablespoons lemon juice
  • 2 tablespoons sugar
  • 2 tablespoons yellow mustard
  • 16 ounces elbow pasta (cooked al dente)
  • 2 large eggs (hard boiled, diced)
  • 1 large red bell pepper (diced)
  • 1 large green bell pepper (diced)
  • 1 large orange bell pepper (diced)

Instructions 

  • Mix mayonnaise, sour cream, relish, lemon juice, sugar, and mustard to make the dressing.
  • Combine cooked pasta, diced eggs, and diced bell peppers in a large bowl.
  • Pour the dressing over the pasta mixture and toss to coat evenly.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

For extra flavor, add chopped green onions or a dash of paprika before serving.
