Ingredients

Protein

  • 600 g Chicken thighs (boneless, skinless, cut into bite-size pieces)

Oil

  • 2 tbsp Vegetable oil

Nuts

  • 1 cup Cashew nuts (roasted, unsalted)

Aromatics

  • 3 cloves Garlic (minced)
  • 1 piece Onion (chopped)
  • 1 red bell pepper Red bell pepper (chopped)
  • 1 green bell pepper Green bell pepper (chopped)

Sauces and seasonings

  • 3 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 1 tbsp Fish sauce
  • 1 tsp Sugar
  • 1/2 tsp White pepper

Garnish

  • 4 green onions Green onions (chopped)

Instructions 

  • Heat oil in a wok and cook chicken until browned.
  • Add garlic, onion, and bell peppers; stir-fry until vegetables are tender.
  • Stir in soy sauce, oyster sauce, fish sauce, sugar, and white pepper; cook for 2 minutes.
  • Add cashew nuts and green onions; toss to combine and serve hot.

Notes

For extra flavor, garnish with additional green onions or a squeeze of lime.
