Delicious and fluffy almond flour pancakes perfect for a gluten-free breakfast.

Ingredients

Dried ingredients

  • 2 cups almond flour (finely blanched)
  • 2 large eggs eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons maple syrup or monk fruit sweetener
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon melted butter or coconut oil

Optional toppings

  • fresh berries (Greek yogurt, maple syrup)

Instructions 

  • Whisk eggs, almond milk, maple syrup, vanilla, and melted butter until smooth.
  • Mix in almond flour, baking powder, and salt; let rest for 2–3 minutes.
  • Preheat skillet over medium-low heat and grease lightly.
  • Scoop 1/4 cup batter per pancake; cook 2–3 minutes until bubbles form, then flip and cook 1–2 minutes until golden.
  • Serve hot with your favorite toppings.

Notes

For extra flavor, add a dash of cinnamon or top with nuts.
