A flavorful and healthy chicken salad made effortlessly in the air fryer, perfect for a quick lunch or dinner.

Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¾ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 2 stalks celery (finely diced (about 1 cup))
  • ½ red onion red onion (finely diced (about ½ cup))
  • ½ cup dried cranberries
  • ½ cup chopped pecans (toasted)
  • 2 tablespoons fresh dill (chopped (or 1 teaspoon dried))

Salt and pepper

Instructions 

  • Pound chicken to ¾-1 inch thickness, season with spices, and air fry at 375°F for 15 minutes, flipping at 8 minutes.
  • Check for internal temperature of 165°F, then let chicken rest for 5 minutes before dicing into ½-inch cubes.
  • Mix mayonnaise, Dijon mustard, and lemon juice to make dressing. Toast pecans until fragrant, then cool.
  • Combine diced chicken, celery, onion, cranberries, pecans, and dill in a bowl. Add dressing and fold gently.
  • Season with additional salt and pepper if needed. Chill for 30 minutes before serving.

Notes

For best flavor, refrigerate the salad for at least 30 minutes before serving.
