A simple, cheesy baked chicken and rice dish made with just five ingredients, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup white rice (long-grain or basmati)
  • 2 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C). Grease a baking dish.
  • Season chicken with salt and pepper. Combine rice and broth, pour into dish.
  • Place chicken on top of rice mixture. Cover with foil and bake 30 minutes.
  • Remove foil, sprinkle cheese over chicken, bake 15-20 minutes until cooked and bubbly.
  • Let rest a few minutes before serving.
