This quick and delicious veggie fried rice is a perfect weeknight dinner that rivals takeout in flavor and speed.

Ingredients

Cooked Rice

  • 2 cups cooked rice (preferably cold)

Mixed Vegetables

  • 1 cup mixed vegetables (carrots, peas, bell peppers)

Cooking Oil

  • 2 tbsp vegetable oil

Garlic

  • 2 cloves garlic, minced

Soy Sauce

  • 1 tbsp soy sauce

Sesame Oil

  • 1 tsp sesame oil

Eggs

  • 2 eggs beaten eggs (optional)

Salt and Pepper

  • Salt and pepper to taste

Instructions 

  • Heat oil in a large pan over medium heat.
  • Sauté garlic for 30 seconds, then add vegetables and stir-fry for 3-4 minutes.
  • Push vegetables aside, scramble beaten eggs until cooked.
  • Add rice, soy sauce, and sesame oil; stir well and cook for 3-4 minutes.
  • Season with salt and pepper, then serve hot.

Notes

Use cold leftover rice for best results and quicker cooking.
