This vibrant salad combines fresh spinach, strawberries, and feta, drizzled with a homemade balsamic glaze for a refreshing dish.

Ingredients

Dressing

  • 1 cup balsamic vinegar
  • 1/4 cup honey (or brown sugar)

Salad

  • 10 oz baby spinach (fresh)
  • 3 cups strawberries (cleaned and hulled, sliced)
  • 1 cup blueberries
  • 1/3 cup feta cheese (crumbled)
  • 1 cup pecans (toasted, some chopped)

Instructions 

  • Heat balsamic vinegar and honey in a saucepan over medium heat.
  • Bring to a gentle boil, then simmer until thickened (about 10 minutes).
  • Remove from heat and cool the balsamic glaze in a bowl.
  • Combine salad ingredients in a large bowl, except pecans.
  • Divide salad into bowls, top with pecans, and drizzle with glaze.

Notes

For added flavor, let the balsamic glaze cool completely before using.
