Ingredients

Salad Ingredients

  • 2 cups arugula
  • 2 large avocados
  • 1 cup cherry tomatoes
  • 1 cup fresh mozzarella cheese
  • 2 tbsp olive oil
  • 1 tbsp balsamic honey vinegar
  • 1 tbsp lemon juice
  • 1/2 tsp ground black pepper (to taste)
  • 1/4 tsp salt (to taste)

Instructions 

  • Whisk olive oil, balsamic vinegar, salt, pepper, and lemon juice in a bowl. Set aside.
  • Dice mozzarella and avocados; slice cherry tomatoes in half.
  • Layer arugula, avocado, mozzarella, and tomatoes on a platter.
  • Drizzle dressing over salad and toss gently. Enjoy!
