This quick and refreshing Mediterranean chickpea salad is packed with flavor and nutrients, perfect for a healthy meal or side dish.

Ingredients

Salad Ingredients

  • 2 cans chickpeas – drained and rinsed well
  • 3/4 cup chopped cucumber
  • 2/3 cup sliced cherry tomatoes
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sliced kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon dijon mustard
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions 

  • Assemble all of the salad ingredients in a large bowl.
  • Add all of the dressing ingredients to a mason jar fitted with a lid and shake well to emulsify.
  • Pour the dressing over the salad and toss.
  • Serve cold or at room temperature.

Notes

For added flavor, let the salad sit for 10 minutes before serving.
