Kale Quinoa Chickpea Salad
A vibrant and nutritious salad packed with kale, quinoa, and chickpeas, perfect for a healthy meal.
Ingredients
Salad Ingredients
- 4 cups kale (de-stemmed and chopped)
- 0.5 tbsp extra virgin olive oil
- 1 can chickpeas (drained and rinsed) (19 oz.)
- 1 cup cooked quinoa
- 1 medium red bell pepper (diced)
- 0.5 medium red onion (diced)
- 1/3 cup roughly chopped cilantro
- 1/2 cup crumbled feta cheese
- 1/4 cup roasted sunflower seeds (for topping)
- 1 batch 3-minute lemon olive oil dressing
Instructions
- Massage kale with olive oil for 1-2 minutes until softened.
- Add remaining salad ingredients (except sunflower seeds).
- Combine dressing ingredients in a jar, seal, and shake well.
- Pour dressing over salad and toss to combine.
- Top with sunflower seeds and serve. Enjoy!
